The Sauce ingredients:
If you want to skip the sauce above use the authentic tasting Pantai Pad Thai sauce which can be found at your local Asian Market.
The Pad Thai ingredients:
Prepare and cook the rice noodles according to recommended instructions on the package. Typically you would heat the water almost to a boil then shut heat off and let the rice noodles sit in the hot water until they are ready. Keep checking to make sure the noodles are not mushy. They should be slightly over al dente.
Gather all of the sauce ingredients in a sauce and pan a heat then set aside. The fish sauce will have a strong aroma. It tastes better than it smells.
Heat 2 tablespoons of the vegetable oil in a large skillet or seasoned wok over high heat. Add the protein of your choice chicken, shrimp, tofu or even pork and make sure to cook it until the recommended safe temperature to eat. (Other than the shrimp, cut the proteins into 1 inch medalion size pieces) then add the garlic and sliced shallots. Keep moving the food in the pan to avoid burning the garlic and shallots. When the protein is complete, put on a bowl or plate to the side.
Crack the eggs and add a small amount of oil and fry the beaten eggs. Scramble the eggs. Put the eggs to the side so you can top off the dish with them. Add the noodles, half of the bean sprouts, half of the peanuts, half of the green onions, protein and the sauce to the pan toss to combine. You may use a quarter cup of water to assist in the tossing process to help to combine flavors. When complete plate the Pad Thai and garnish or top off with remaining peanuts and bean sprouts and scrambled eggs. To taste and your heat tolerance lightly dash some cayenne pepper over the dish and squeeze lime juice over the final dish. Slice up the remaining lime into your shape of choice and garnish.
